Easy Beef and Caramelized Onion Sandwiches with Au Jus Dip

Ingredients
4x long rolls, baguettes or buns
300gsliced roast beef
2tbspdijon mustard
2 cupwater
2tbspsoy sauce
2tbspworcestershire sauce
3onions
1tbspwhite sugar
1tspwhite vinegar
1beef stock cube or tsp beef stock powder
2tspoil
Instructions
To make the au jus: place the water, soy suace, worcestershire sauce and beef stock powder in a saucepan. Chop one of the onions into quarters, place in the saucepan and bring to a simmer. Let cook for 10 minutes then strain half into a jug and half into a bowl.
To make the caramelised onions: Slice the remaining two onion into thin slices. Heat a teaspoon of oil in a skillet then add the onion, sugar and vinegar cooking over a low heat and stirring occasionally. After about 15 minutes, the onions will start to caramelise. If starting to burn, add a tiny splash of water
To make the sandwiches: Place the beef slices into the bowl with the jus and turn to coat in the liquid
Slice the rolls in half, spread with a little bit of dijon mustard and pile up with the saucy beef and caramelised onions
Serve the sandwiches sliced in half with the au jus for dipping
